Ingredients:

  • 50 gm spinach
  • 50 gm mushroom
  • 1 small onion
  • 1 small capsicum
  • 1/2 tsp Kali mirch (black pepper) powder
  • to taste Salt
  • 1 tsp Soya sauce
  • water as needed
  • 2 tbsp butter
  • 2 green chilli
  • 1 small packet noodles

  • Finely chop all veggies:
    • Select a variety of fresh vegetables such as spinach, mushroom and capsicum.
    • Chop them into uniform pieces for even cooking and a pleasing presentation.
  • Heat a large pan:
    • Choose a spacious pan to allow for easy stirring and mixing.
    • Add a generous amount of butter and let it melt over medium heat, creating a rich, flavorful base.
  • Sauté ginger and green chilies:
    • Grate fresh ginger and finely chop green chilies.
    • Add them to the melted butter, stirring briefly to release their aromatic flavors and create a fragrant foundation.
  • Add all the chopped veggies:
    • Carefully add the prepared vegetables to the pan.
    • Stir well to ensure they are evenly coated in the buttery mixture.
  • Season the stew:
    • Pour in enough water to cover the veggies, about 4-6 cups depending on the quantity.
    • Season with salt, freshly ground black pepper (kali mirch), and a splash of soy sauce for added umami.
  • Add noodles and cook:
    • Introduce your choice of noodles to the pot, stirring to combine with the vegetables and broth.
    • Allow the stew to boil on medium flame for about 15 minutes, ensuring the noodles are cooked and flavors meld together.
  • Garnish and serve:
    • Once cooked, remove from heat and garnish with freshly chopped green coriander leaves.
